- Vinification: Château Cheval Blanc is produced from the famous gravel, clay, and loam soils of Saint-Émilion. The vines are cultivated with the utmost care, and each plot is vinified separately to preserve the unique character of the terroir. After careful hand-harvesting, fermentation takes place in temperature-controlled concrete and stainless steel tanks. The wine then ages for approximately 16 to 18 months in new French barriques, gaining depth, complexity, and elegance in the process.
- Food pairing: An excellent accompaniment to beef tenderloin, veal loin, lamb, game dishes, or braised beef. It also pairs superbly with truffle dishes and aged hard cheeses. When enjoyed young, decanting is recommended to allow its complex aromas to fully unfold.
- Aroma & Taste: Deep ruby red. On the nose, a multi-layered bouquet of black currants, blackberries, and ripe cherries unfolds, accompanied by violets, graphite, licorice, delicate spices, and subtle toasted notes. On the palate, Château Cheval Blanc is exceptionally precise and harmonious. The silky tannins, lively acidity, and impressive freshness give the wine a fascinating balance between power and elegance. The long, mineral-driven finish promises excellent aging potential.
