- Type:
- Vinification: Fermentation of the individual lots in temperature-controlled stainless steel and concrete fermentation tanks. Extraction is carried out very gently and without excessive pressure. The wine is aged for 16 months in French oak barrels, half of which are new.
- Food pairing: Wonderful with beef—from steaks and stroganoff to steak tartare or slow-roasted meats from the oven. Excellent with aged hard cheeses—from Parmigiano Reggiano and Sbrinz to Pecorino or aged Alpine cheeses.
- Aroma & Taste: A subtle bouquet of licorice, graphite, spices, and dark berries heralds the Haut-Bailly. On the palate, the wine is full-bodied, complex, and elegant at its core, framed by youthful, firm tannins. The Haut-Bailly finishes with a long, energetic aftertaste characterized by notes of pencil lead.
