  • Vinification: Fermentation of individual batches in separate concrete tanks. Very gentle maceration to extract the tannins. Aged for 1 year in French barriques.
  • Food pairing: Wonderful with beef—from steaks and stroganoff to steak tartare or slow-roasted meats from the oven. A wonderful pairing with all kinds of braised dishes—whether leg of lamb, beef shoulder, roast pork, or osso buco. Excellent with aged hard cheeses—from Parmigiano Reggiano and Sbrinz to Pecorino or aged Alpine cheeses.
  • Aroma & Taste: On the nose, notes of black cherries, wild blueberries, and blackberry jam emerge, with a hint of violets, undergrowth, and aromas of toasted bread. Full-bodied and packed with black and blue fruits, it features a firm structure of ripe, fine-grained tannins and plenty of freshness, finishing with a very long and complex aftertaste.
