- Vinification: The Gässli vineyard is located in the northwestern part of the Jenins vineyards. It faces south, has a moderate slope, and thus provides the vines and grapes with optimal sunlight. The soil is calcareous with a certain proportion of Graubünden slate. This allows the Chardonnay grapes to ripen perfectly, developing pronounced fruit aromas. Labor-intensive hand-harvesting, approximately 6 hours of maceration, gentle pressing, gravity-based clarification of the must, fermentation, and aging in French barriques with 30% new oak for 10 months.
- Food pairing: A perfect accompaniment to salmon—whether grilled, smoked, steamed, or simply marinated raw. Wonderful with fish—from grilled sea bream and trout to steamed pikeperch or a fine monkfish fillet. A perfect pairing for creamy risotto in all its forms—whether with saffron, porcini mushrooms, pumpkin, or plain.
