- Vinification: The whole grapes are gently pressed. Overnight, the must clarifies through natural sedimentation, followed by racking into a 600-liter barrel—and in some cases, into used French oak barriques. Fermentation begins with pied de cuve; malolactic fermentation occurs naturally. Sulfur is added for the first time after about one month. The wine remains on the lees for about 7 months, with 1–3 bâtonages, after which it is filtered, bottled, and aged in the bottle for 6 months.
- Food pairing: Scampi crudo with citrus oil, saffron risotto, beet carpaccio with buffalo ricotta and fennel pollen.
- Aroma & Taste: The nose is cool, precise, and floral, with white blossoms, gooseberry, raspberry, and yellow peach. On the palate, it is crystalline, salty, and has a waxy, chalky texture. Yellow peach and a distinctive sweet cherry note form the fruit profile, underpinned by a hint of flint. The structure is linear and full of tension, with a dry and deep finish.
