- Vinification: Hand-harvested, followed by spontaneous fermentation in stainless steel tanks. Aged in used and new barriques for 12 to 14 months. As the name suggests, the “Unplugged” wines are produced without any frills, but with a keen sense of nature's rhythm. That means: no selected yeasts for fermentation, no enzymes, no fining agents, and in good vintages, no filtration either.
- Food pairing: Hannes's Zweigelt pairs well with or without food. A small plate of meat goes perfectly with it. But it also pairs just as well with all kinds of game, including terrines. From Burgenland, for example, Esterhazy roast beef or goulash. Our local bratwurst with rösti also pairs perfectly.
- Aroma & Taste: On the nose: red cherries, elderberry, and spicy rosewood. On the palate, it's very elegant and fresh, with fine extract and plenty of structure, rich tannins, nougat, plums, mint, and a hint of cloves, followed by notes of tobacco and coffee in the berry-forward finish. A long, spicy finish.
