Vinification: Hand-harvested, followed by spontaneous fermentation in INOX stainless steel tanks. This Cabernet Sauvignon is aged in both used and new barriques. His “Unplugged” wines are, as he puts it, “produced without any frills, but with a keen sense of nature's rhythm.” That means: no selected yeasts for fermentation, no enzymes, no fining agents, and in good years, no filtration either.
Food pairing: Paprika chicken, roast beef, goulash, and whole grilled chicken. Dark and light meats from the grill, as well as kid goat.
Aroma & Taste:\u00A0\u00A0The bouquet displays noble restraint, is incredibly harmonious and intricately woven, with notes of cassis, milk chocolate, and warm oak; on the palate, it has a broad structure with very dense tannins, flavors of reduced berry compote, sweet tobacco, and cocoa, and lingers beautifully. Possesses very good aging potential.
