  • Vinification: The Altamimbre is produced with the utmost care and precision. The grapes are harvested by hand and strictly checked again on the sorting table. Fermentation and maceration take around 20 days to extract maximum aromas and structure. The wine then matures for 20 months in a combination of American and French barriques, with only a small proportion being aged in new wood. During bottling, the wine is treated with minimal filtering to preserve its natural richness and expressiveness.
  • Culinary recommendation: Perfect with strong meat dishes such as lamb, beef and game as well as mature cheese made from cow's, sheep's or goat's milk. Tapas and first-class jamón also harmonize perfectly with Altamimbre. For the best taste experience, we recommend decanting it one hour before drinking.
  • Aroma & flavor: The deep nose reveals aromas of ripe plums, dark chocolate, coffee and a fine tobacco sweetness. On the palate, the Altamimbre delights with a velvety attack, elegant, round tannins and a delicately creamy texture. Notes of black cherries and ripe plums give it an opulent fullness that remains meltingly soft at the same time. An exclusive top wine that we only receive in very limited quantities from the bodega.
