- Vinification: The grapes, grown at high altitudes between 420 and 680 meters, are harvested by hand. After destemming, a brief cold maceration takes place. Fermentation occurs over approximately 24 days in stainless steel tanks at controlled temperatures of 15 to 16 °C. The wine then remains on its fine lees in the tank until bottling, with minimal filtration for stabilization.
- Food Pairing: Ideal as an aperitif and with light appetizers, fish dishes, seafood, summer salads, or Mediterranean cuisine.
- Aroma & Taste: Pale yellow with greenish highlights. The nose reveals aromatic freshness with notes of white flowers, citrus fruits, and ripe stone fruits, accompanied by subtle herbal nuances such as lavender and rosemary. On the palate, it is lively and well-balanced with fresh acidity, juicy fruit, and a smooth texture. The finish is characterized by citrus and white fruit with an invigorating freshness.
