- Vinification: The grapes are harvested by hand in September/October. Primary fermentation takes place in steel tanks at around 18/19 degrees Celsius with selected yeasts. After resting on the yeasts for a month, it is clarified and decanted for the formation of foam and rests again for approx. 30 days on noble yeasts. After bottling, it remains in the bottle for several weeks.
- Culinary recommendation: Light starters, fresh salads, seafood and mild cheese variations. Ideal as an elegant aperitif or for special occasions.
