- Vinification: Hand-harvested, followed by spontaneous fermentation in INOX stainless steel tanks. This Merlot is aged in both used and new barriques. His “Unplugged” wines are, as he puts it, “produced without any frills, but with a keen sense of nature's rhythm.” That means: no selected yeasts for fermentation, no enzymes, no fining agents, and in good vintages, no filtration either.
- Food pairing: Pairs well with grilled cuts of beef, duck breast, and roasted game (not braised). A leg of lamb roasted in the oven—that is, gigot. Aged cheeses made from cow's milk. Simple dishes like spaghetti Bolognese—refined wines—simple dishes. Crispy fresh rösti fried in butter with cheese and bacon.
- Aroma & Taste: The seductive nose offers an intense bouquet of blackberries, black truffles, subtle coconut notes, roasted aromas, vanilla, thyme, and cilantro; the palate then presents itself as powerful and impressive, again with plenty of dense berry fruit, a robust body equipped with firm tannins, and an enormously long-lasting finish.
