- Vinification: Careful hand-picking. The grapes are pressed with little pressure, then statically pre-clarified and fermented in steel tanks. Ageing on the fine lees takes place for 18 months in French wooden barrels, where malolactic fermentation also takes place.
- Culinary recommendation: Gorgeous with fish - from grilled sea bream and trout to steamed zander or a fine monkfish fillet.
- Aroma & Taste: Expressive and complex on the nose, with notes of flint and graphite, some pear, Golden Delicous apples and finely interwoven roasted aromas. The attack is soft and long, then a lot of pressure and great play on the palate, the Corton-Charlemagne ends in an almost endless finish. Great cinema!
